If you have a sweet tooth like me but prefer a healthy alternative.....you must try this! Rocky Road Candy, Spa Style from our friends at the The Oaks at Ojai Makes 34 Pieces, (approx. 1 by 1), 12 Calories per serving Ingredients 2 T. HONEY 1 T. PEANUT BUTTER 2 T. CAROB POWDER 1 TSP. VANILLA 4 RICE CAKES, UNSALTED AND VERY CRISP Preparation Combine all but rice cakes in a pan and cook and stir until melted. TO MICROWAVE: Combine in a 4 cup glass measuring cup or bowl and microwave one minute. Stir until smooth. If mixture is too thick, add a few drops of water. Break rice cakes into approximately one inch pieces in a non-stick large bowl. Use a rubber spatula to scoop the Carob Syrup into the bowl and onto the broken rice cakes. Use the same spatula with a fork to toss the mixture to partially coat the rice cakes. Press the Rocky Road Candy into a nonstick sprayed eight inch pan or plate and cool. Break or cut into one inch pieces and serve. NOTE: Not too many people will stop at one of these if they have a chance to get more. However, you can eat four of them for under 50 calories. If these are left for a few hours or overnight, they will loose their crunch - to restore their crispness heat 1 minute in the microwave. |
